Hi! It's Jilly. Summer is upon us, so that means it's...grilling time! I've always loved Mexican food, and that love increased when we lived in Arizona, where avocados, cilantro, and bell peppers are cheap! Now that we're out in New York I have to get my Mexican fix in other ways.
When I was at Price Chopper I found these JalapeƱo & Cheddar American Craft Sausages from Hillshire Farm and the wheels started turning! I wanted to make something with a Southwest flair, but fast and easy at the same time. #PriceChopperBBQ
I ran over to the produce section and picked up some grape tomatoes, bell pepper, and avocado. Okay, I didn't actually run. ;) Then, I picked up some Southwest Style Ranch Suddenly Salad.
At home I chopped up the sausage, bell pepper, and avocado. You want to avocados to still be firm, but pretty close to ripe. Then I threaded the tomatoes, sausage, bell pepper, and avocado onto the sticks. I could have sworn I had skewers, but I couldn't find them! So, I used chopsticks instead. I hope that's not breaking some kind of rules...using chopsticks to make Mexican food. Ha!
I wanted to grill my kebabs, but Hubby wasn't home yet and I'm afraid of the grill! Every time I use it something crazy happens! So, I just stuck with using the grill pan on the stove. Works just as well!
I also made the Suddenly Salad. I followed the directions on the box, then added some of the leftover avocado, bell pepper, quartered tomatoes, and a couple handfuls of frozen corn. Yum!! So quick and easy!
Edited to add: I forgot to tell you that I was out of mayo, so I substituted sour cream in the pasta salad. The kids and I ate before Hubby got home from work, then left for lacrosse practice. When he got home Hubby texted me and said it was the best pasta salad he's ever had and he almost ate the whole bowl himself...and he hates pasta salad! Son, who also isn't a pasta salad fan, said, "It's not too bad", which for him is huge. So, yeah...it's good!
